This simple pancake batter can be dressed up in a variety of ways- add cinnamon, fruit, or chocolate chips to make it your own. It’s completely fool-proof and quick- perfect for you non-morning people. These pancakes will be ready faster than you can brew your pot of coffee.
- 1 1/2 c. all purpose flour
- 3 1/2 tsp. baking powder
- 1 tsp. salt
- 1 tbsp. sugar
- 1 1/4 c. almond milk any milk will suffice - I opt for dairy-free
- 1 egg
- 2 tbsp. melted Earth Balance butter alternative may substitute butter
Preheat your oven to 250 degrees F. Place an oven-safe dish in the oven. This is where you can keep the finished pancakes warm until the entire batch is ready.
Sift together flour, baking powder, salt and sugar.
In a separate bowl, mix milk, egg and melted butter.
Slowly pour the liquid bowl contents into the dry ingredients while stirring. Mix until smooth.
Prep a skillet with butter or an alternative over medium heat.
Use a 1/3 measuring cup to pour batter onto skillet.
When the bubbles begin to pop, pancakes are ready to be flipped.
