Not only are these fruitful breakfast bars delicious, they’re beautiful. Go snag some fresh berries from your local farmers’ market and spend your afternoon baking. It’s good for the soul.
- 1 1/2 c. all-purpose flour
- 3/4 c. white sugar
- 1/2 tsp. salt
- 2 tsp. baking powder
- 1/2 c. canola oil
- 1/2 c. almond milk any milk will suffice - I opt for dairy-free
- 1 egg
- 3/4 c. fresh blueberries
- 1/3 c. fresh raspberries
- shaker of equal parts sugar and cinnamon topping
Preheat oven to 400 degrees F.
Line an 8x8 pan with parchment paper.
Combine flour, sugar, salt, and baking powder in a mixing bowl. Stir.
Add oil, egg, milk. Whisk.
Fold in berries.
Sprinkle the cinnamon/sugar mixture on top.
Bake for 30 minutes.
