INGREDIENTS
  • 2 eggs
  • 1 avocado
  • 2 slices Italian bread
  • salt & pepper to taste
  • 1 tbsp. Earth Balance butter alternative
INSTRUCTIONS
  1. Heat a skillet over medium heat.

  2. Add 1/2 tbsp. butter to the skillet.

  3. Crack two eggs into the skillet and cook to your liking. For a steamed egg, add a tbsp. water to the skillet and cover.

  4. Toast the bread to your liking.

  5. Slice the avocado.

  6. Spread the remaining 1/2 tbsp. butter on the toasted bread slices.

  7. Place the avocado on the toast.

  8. Place the eggs on top of the avocado.

  9. Salt & pepper to taste.
